1/4 cup butter (1/2 stick) 1/4 cup All Natural Pacifica Culinaria Avocado Oil 6-7 large onions, slice thin 4-6 shallots, slice thin 1 1/2 - 2 quarts of beef or chicken stock, or a combo of the two sprig of fresh thyme, if you don't have fresh, then use a teaspoon of dried thyme 2 bay leaves 1 tablespoon Worcestershire salt and pepper French Baguette Grated Gruyere

In a large soup pot, melt butter and avocado oil, add onions and shallots and cook over medium heat, stir frequently. Cook them till they start to turn golden brown, it is ok to have some brown bits on the bottom of the pan. Add the stock, bay leaves and thyme, scraping the brown bits off the bottom of the pan. Simmer it for 20 minutes and remove the bay leaves. Add the Worcestershire and salt and pepper to taste. You can adjust the seasoning at that point, when I used more chicken then beef I added more Worcestershire, but when I used beef stock I didn't need so much. Slice baguette and lightly spray or brush on avocado oil on the bottoms. Bake in a 350 degree oven for about 10-15 minutes, just beginning to brown, add cheese and switch to broil until cheese is bubbly.
